Her husband, Paris, suggested they call the square marshmallow-cookie sandwich a "Malvi", short for the Spanish word for marshmallow, malvavisco. They moved to Atlanta to team up with the family, and their creation blossomed into a business with funding from a Kickstarter campaign. Malvi's attention to flavor and quality sets it apart from other marshmallows. Malvi Marshmallows are infused with whole ingredients, like dried hibiscus, whole vanilla beans, and fair trade cocoa. Sfoglini

Since its founding, Sfoglini has been operated by Steve Gonzalez and Scott Ketchum: a chef and a creative director, respectively, each with a serious passion for pasta. Steve Gonzalez—overseer of all things food at Sfoglini—was a chef for 14 years prior to launching Sfoglini, spending many of those years making pasta. Gonzalez started his education at Vetri in Philadelphia and Locust Tree in Westchester before furthering his skills in kitchens throughout Western Europe including (the three Michelin star) El Raco de Can Fabes in Sant Celoni, Spain where Gonzalez ran the pasta program. From there, he made pasta throughout Italy, of course: at Frosio in Villa d’ Alme; Sapposenta in Cagliari, Sardegna; and Trattoria Majda in Friuli. Once back stateside, Gonzalez made pasta in the kitchens of Co., Hearth, Robert’s, Frankies Sputino, and Insieme, where Chef Marco Canora tapped him to develop the pasta tasting menus. Scott Ketchum—overseer of all things not food at Sfoglini—worked as a Creative Director and Graphic Designer for 18 years in both New York and San Francisco, with a focus on brand development, web design and sustainable packaging and design. Ketchum studied brewing and management at the Siebel Institute in Chicago and then traveled to Italy, France, and Belgium to deepen his understanding of local food and beverage cultures and how they could intersect with design and business. The closer I got to my food, the more I thought about entrepreneurship and self-sufficiency. I wanted to write my own narrative in life. I wanted to start a food business. Concurrently, like it is for most, life was busy. I was constantly turning to my father-in-law’s regionally famous tomato sauce recipe to make dinner quickly. I used it for everything, from cassoulet to ratatouille to pizza. I wondered why more people didn’t use tomato sauce beyond pasta. Ours is so good, and good for so much more! With the goal of becoming an “inner aisle disruptor,” I joined forces with my sister-in-law, Laura. Using an initial investment of $150, we began bottling Pa Vitelli’s tomato sauce by hand and branded it Classic Red. The early days of Jar Goods were not unlike other scrappy food start-ups - we sold at farmer’s markets and street fairs, we tested the market and proved our concept, we employed grass-roots efforts and a can-do spirit. Subsequently, Jar Goods amassed a loyal local following and we began getting Classic Red on store shelves. We graduated from self-produced to professionally packed and expanded our line with Classic Vodka and Classic Spicy in September 2015. One year later, we were offered a coveted spot in the Chobani Food Incubator and learned a great deal about how we could offer “Better Food For More People.” In the beginning, Jar Goods may have been oddly inspired by other brands, but now, our inspiration comes from our consumers. They are busy and fulfilled and don’t have time to cook from scratch. That is a triumph not to be exploited or condemned but celebrated. They should not be relegated to bad quality because they also seek convenience. Our products shout from the shelf “I’ll help you out!” We believe in living and eating with mindful purpose, but with respect for the constraints of modern life. Seeds are planted, and grow until procured at different times of the year. Then they're used in making blends and masalas. The entire family is involved in this process. Each family’s blend is distinctive and a source of pride. Every fall, a whole week was dedicated to making their own dhansak masala in Meherwan’s grandmother's home. Many of these recipes are handed down for generations. In this case from Meherwan’s grandmother, down to his mother, and eventually passed on to Meherwan. When Chai Pani first opened, Meherwan’s mom came to the U.S. and spent two months teaching the staff of Chai Pani about her blends and how to work with spices. Spicewalla sources directly from quality suppliers in small quantities, anywhere from twenty-five to one hundred pounds in a delivery. This method of buying and receiving smaller shipments ensures the freshness of the product not only for our benefit, but for the benefit of our customers. This is also why we roast, grind, and pack our spices to order.
