Thanks to a well timed piece on NPR about the benefits of eating candy (really!) he stumbled onto the idea to give his wife, Jenn, a candy thermometer and a recipe for marshmallows. They were a hit and that first batch of marshmallows turned out pretty… wonderful. Soon after that first batch they started Wondermade and began delivering handcrafted treats all the world over. Marc then went on to own and operate two popular retail ice cream shops and produce high quality, super-premium frozen desserts for restaurants, caterers, and other ice cream shops for 25 years—winning Best of Boston twelve times. In Spring 2009, Coop set out to create his own brand of handmade ice cream and products, and COOP's MicroCreamery® was born. COOP's has since developed recipes and techniques using the latest ingredient innovations along with the promise of no artificial ingredients of any kind. Wanting to keep his staff busy in the off-season, Marc started playing around with a hot fudge recipe. The resulting concoction became so popular that in 2011, the hot fudge production split off from the ice cream to become its own business. A vegan edition was developed as well. We were running a flower nursery, Flatland Flower Farm, out of several backyards in Berkeley and decided it was time for a bit more space for our business. We left the city behind and found a little house in Sebastopol, a small town in western Sonoma County, California. The house was in the middle of a big apple orchard and so, with little more than enthusiasm, we became apple farmers. Ten years after moving to our apple farm, using an old wooden apple press, we juiced some of our apples for the first time and aged that juice in barrels. After a year, our aged juice had fermented into startlingly delicious farm-direct apple cider vinegar. We were hooked, and that first batch sparked a deeper curiosity — “What else can we make from our apples?” The answer, it turns out, is “a lot!” Since creating our first batch of apple cider vinegar in 2009, I’ve used my culinary creativity to turn our apples, apple cider, and apple cider vinegar into the shrubs, caramels, granolas, and other treats you can find here and at our farmer’s market stand in San Francisco.
